Incredible Pizza Soup
We had such a good day today! We went to the pumpkin patch with Kara and played at the petting zoo. It was a perfect October day with some clouds and the temps in the 50’s.
I
had made this week’s meal plan before I realized we were going to go but I
didn’t have to change a thing. I wanted a good tomato soup recipe for the
crockpot and so that is what I set up last night before going to bed.
This
soup is made in a crockpot with a small amount of additional prep right before
serving. All in all it is pretty easy to make and I think that Josh will be
able to do it in the future when baby comes in January.
Ingredients:
2
(14oz) cans of diced tomatoes, with juice
1
cup diced celery
1
cup diced carrots
1
cup diced onions
1
tsp oregano
1
tsp basil
4
cups of chicken broth
½
cup flour
1
cup parmesan cheese
½
cup butter
2
cups half and half, warmed
1
tsp salt
¼
tsp pepper
Add
all of the veggies and the broth into the crockpot. Cover and cook on LOW for
5-7 hours. (Before the next step you can put this in a blender to make it
smooth. I find it helpful because Kara is such a picky eater.)
About
30 minutes before serving prepare a roux. Melt the butter in a saucepan and
stir in the flour. Stir the mixture constantly for 5-7 minutes. Add one cup of
hot soup to the roux, stir until smooth. Then add 3 more cups of soup to the
roux and mix it all back into the soup remaining in the crock.
Stir
in the half and half and parmesan cheese and cover. Cook on LOW for another 30
minutes or until ready to serve.
This
soup is so good! I sliced up a loaf of French bread and dipped it in the soup.
Yummy!
Kara
ate it all and even helped me name it. She said it tasted like pizza. I’ll take
it, as long as it gets her to eat her veggies!
Do
